For run_tests.py, the host default is `host_debug_unopt`, but when running tests on apple chip simulator, we should set it to `host_debug_unopt_arm64`

This pull request updates the engine testing documentation to specify using --variant host_debug_unopt_arm64 when running tests on Apple Silicon Macs. The changes are correct and improve the documentation for developers on arm64 hardware. I've added a couple of minor suggestions to remove trailing whitespace for formatting consistency.
